American pastrami is usually made from the navel end of the brisket. It's cured and coated with a mix of spices such as garlic, coriander, black pepper, paprika, cloves, allspice, and mustard seed. After that, it's smoked and steamed. The hot pastrami sandwich can be traced back to 1887.
